Vegetable Slice

Vegetable slice.

This is ridiculously easy to make, and really tasty, and versatile, too! It’s great hot or cold!


1 large onion (chopped)

5 eggs

150g self raising flour

575g of veg (grated courgette, grated carrot, sweetcorn, chopped sweet peppers, etc – the choices are endless)

1 cup of grated cheese

60ml veg oil


Preheat oven to 170 degrees C Fan, Grease and line a 30x20cm traybake tin,

Fry the onion in a little oil,

combine with the vegetables, flour and cheese in a large bowl. Add oil and lightly beaten eggs, and mix. Season with salt and pepper. Pour into traybake tin.

Bake for 30mins until golden and set. Allow to cool slightly before cutting.
