Potatoes (leave skin on if new potatoes)
For the Vinaigrette:
4 tbsp of Olive Oil
3 tbsp Apple Cider Vinegar
1 diced onion
1 diced apple
a handful of pickled gherkins
1 tsp sugar
Salt, pepper to taste
Boil potatoes – the amount is down to how many you’d like to feed! Leave the skin on if they are fresh potatoes.
Mix all the ingredients for the vinaigrette incl diced apple, onion and gherkins – also add a bit of the water you boiled the potatoes in.
Add the potatoes, once they are cold: Slice or cut into cubes.
Let the salad sit for an hour (or eat straight away).
Perfect for a healthy carb boost on a wander as a picnic!
